- Doctor Fish is a new family business based in the tranquil village of Cratfield. We offer a range of products made with the finest organic farmed salmon from the Shetland Isles. Wherever possible, all our other ingredients are sourced from local producers and suppliers. At present (May 2007) we offer the following:
Traditional and beetroot cure Gravadlax available sliced or as whole sides.
Gravadlax pates made with the finest fresh ginger root, fresh dill, limes, lemons, horseradish root, chopped coriander leaves, local butter and creme fraiche.
Dill sauce and coriander salsa, made with locally sourced herbs - both ideal accompaniments to Gravadlax and poached salmon.
We are constantly trying out new recipes for curing salmon and making our pates and sauces and welcome suggestions from our customers.
You can find us at Beccles Farmers Market (Ellough - 1st and 3rd saturday of each month), Holton (Halesworth) Farmers Market (2nd saturday of each month), Barsham Farmers Market (last saturday of each month). Our products are also avaliable at selected farm shops and delicatessans including Friday Street (Farnham nr. Snape on A12), Reckford Farm Shop (Middleton), Market Fields (Holton) and Eat Anglia (Earl Soham)
